Honey baked ham

Ingredients:

°2.4kg Fresh ham nuts

°2 Oranges

°3 tbsp. tablespoons strong mustard

°8 tbsp. liquid honey

°3 tbsp. tablespoon sherry vinegar

°6 tbsp. tablespoons dry sherry

°flower of salt

°Pepper

PREPARATION:

Rub the ham with fleur de sel and ground pepper. Reserve 1 hour.

Take the zest of 1 orange. Cut it into thin strips. Boil them for 2 minutes. Cool and drain. Put these zests in a bowl with the juice of the 2 oranges, the honey, the vinegar and the sherry.

Preheat the oven to th. 6 (180°C). Wipe the ham nut. Place it in a dish. Spread with mustard, then brush it with the honey sauce. Bake for 2½ hours, basting often with the sauce. Reserve the meat for 15 minutes in the turned off oven before cutting it into thin slices using an electric knife. Serve hot.
