Homemade Mexican migas Recipe

Ingredients:

10 corn tortillas

1/4 onion diced

1 diced jalapeño

1 diced tomato

I cup shredded cheese (optional)

6 eggs

Some milk

Salt and pepper to taste

EAT VEGETABLE BEEF SOUP

PREPARATION:

  1. Cut tortillas into small cubes
  2. Fry tortillas in cooking oil in two batches (while
    tortillas are frying dice veggies)
  3. Put tortillas aside and cook tomato, onion and
    jalapeño until they are soft.
  4. Beat eggs with some milk
  5. When veggies are soft add tortillas and mix
  6. Now add eggs and salt and pepper, mix well
    until cooked
  7. Now top with cheese if you like
    My grandmother made this very economical meal
    to feed a bunch of her grandkids. I added
    pictures that documents the process. Enjoy! This
    is about 3-4 servings
