8 slices bacon chopped
4 tablespoons butter
4 large Russet potatoes or Yukon Gold potatoes peeled and cubed
1 medium onion finely chopped
2 cloves garlic minced
⅛ teaspoon cayenne pepper
¼ cup flour
2 ½ cups low sodium chicken broth
2 ½ cups 2% milk
1 cup shredded sharp cheddar
1 cup shredded white cheddar
½ cup sour cream
¼ cup chopped chives
Salt and pepper to taste
